Culinary Influences of Westward Expansion

 

The Industrial Revolution attracted many immigrants and emigrants to the cities.  Many Americans did not want to compete for jobs in the city or deal with the unsanitary crowded conditions.  These immigrants and emigrants moved west adding many dimensions to American culture.  The western lifestyle was a huge contrast to urban life and southern lifestyles.  This project will help you gain an understanding of the unique customs and traditions that originated during westward expansion.  (Many of these customs are kept alive for entertainment purposes only.)  As culinary students we need to look at customs and cultures to learn how a particular cuisine originated.  In this case we will look at the ever-popular culture of the cowboy and his culinary companion the chuck wagon.

 

Take on the role of a cowboy and create a journal that covers a typical cattle drive from beginning to end.  In this journal you must cover the following information:

Preparing for the cattle drive

          What do you bring? (List of supplies)

          Where did you pack everything?

Goals of the trip          Why are you going?

          Where are you going?

          Who’s going (The lone cowboy is an American Myth Cattle were always driven by a group of drovers.) *hint: you need a cook
