International Culinary Arts

The International Culinary Arts Academy features the Access ACF program, a program of study created and supported by the American Culinary Federation. This program introduces students to areas of the food services industry not traditionally covered in culinary arts programs. These areas include customer relations, accounting, food cost controls, marketing, and dining room management.  Students will also be instructed in the more traditional aspects of culinary arts: food preparation and safety skills. One thousand hours of paid internship will be required prior to graduation.
Students have access to a "showcase" kitchen that provides a viewing area for visitors. There is also a large commercial kitchen that will be used for food preparation.



The Culinary Arts complex features the student-operated restaurant, Compass Cafe'. Students will benefit from an integration of school-based and work-based opportunities in the restaurant. The members of the International Culinary Arts Advisory Board seek ways to give students practical experiences in customer relations, food preparation, and food service. Board members include local business owners and community college representatives. These members provide guest speakers, field trip opportunities and internships. They also keep the faculty and students abreast of industry trends, needs, and requirements.
